Lemon-Garlic Marinated Pork Chops

There is nothing like the perfectly grilled pork chop: crispy on the edges, moist in the middle and flavor packed all around. When it comes to pork, things can get a little dicey (the meat can dry out if left on the heat for too long), or they can be super simple, hot off the grill and onto the dinner plate!

Lemon-Garlic Marinated Pork Chops

Makes 4 8-ounce pork chops

INGREDIENTS

  • 4 8-ounce porterhouse-style pork rib chops
  • ½ cup chicken stock
  • 1/3 cup lemon juice
  • 2 Tablespoons olive oil
  • 1 Tablespoon brown sugar
  • 6 cloves garlic, sliced
  • ¼ teaspoon crushed red pepper
  • 1 ounce dried mint

ASSEMBLY

Combine all ingredients and marinate pork for 4 to 24 hours.

Heat grill using direct heat method.

Remove pork chops from the marinade and pat dry.

Grill over direct heat until done (instant-read thermometer should be at 150 degrees when inserted right next to, but not touching, the bone).

Let rest for about 10 minutes before serving.
