Swedish Cardamom Buns: Take and Bake Instructions

Serves 6 (1 bun per guest)  

Line the baking dish with parchment paper. Remove the cardamom buns from the bag and place evenly in the baking dish. Cover lightly with plastic wrap, then place on the counter to thaw overnight. The plastic will prevent a skin from forming on the cardamom buns as they thaw. Let cardamom buns thaw for 10 to 12 hours at room temperature until they have doubled in size. Time will vary depending on the temperature in your home. 

Preheat the oven to 350º degrees.

Make an egg wash by mixing 1 beaten egg yolk with 2 tablespoons of water, then straining through a fine mesh sieve. Using a pastry brush, lightly brush the egg wash over the cardamom buns, then sprinkle with pearl sugar just before placing them in the oven. This will give the cardamom buns a golden brown shine. 

Bake for 15 to 18 minutes, or until the cardamom buns appear golden brown in color. Brush the buns with cardamom glaze as soon as they are done, then serve. 

Tip: Placing the cardamom buns in more of the middle or three-fourths-high rack setting in the oven while baking (as opposed to the top rack position) will prevent them from darkening prematurely.
